What Is Early Harvest Olive Oil?

Early harvest reflects a quality-focused approach in olive oil production. In this method, olives are picked before they fully ripen, typically during October and November.


At this stage, the olives are greener and naturally higher in polyphenols. Polyphenols give olive oil its characteristic bitterness and peppery finish, while also helping it retain its freshness for longer.

  • Intense fruity aroma
  • Balanced bitterness and pepperiness
  • Higher antioxidant content

However, early harvest comes with a trade-off. Since the olives are not fully ripened, the oil yield is lower. For this reason, early harvest olive oils are more limited and more valuable compared to late harvest oils.
