Is Olive Oil Suitable for Frying?



The use of olive oil for frying has long been misunderstood.
In fact, when the right type of olive oil is selected, it can be a safe and well-balanced option for frying.
Olive oil naturally has a high resistance to oxidation.
Especially extra virgin and unrefined oils remain stable when used at appropriate temperatures.
When frying with olive oil, keep in mind:
- Do not overheat the oil
- Avoid reaching the smoking point
- Do not reuse the oil repeatedly for long periods
When used under these conditions, olive oil:
- Absorbs less into food
- Does not overpower the natural taste of dishes
- Is relatively easier to digest
For frying, it is generally recommended to choose:
- Olive oils with a milder flavor
- Medium or late harvest oils
Highly aromatic early harvest oils may lose their distinctive character during frying and are better suited for raw use.
